DINNER RECIPES:
Creamy Tomato Meatball Casserole
Yield: About 6 servings
Cook time: 25 minutes
Ingredients:
36 – ½-oz. Cooked Perfect Italian Style Meatballs
1 – 10-oz. can tomato soup
1 – 26-oz. pasta sauce, any flavor
1/3 cup mozzarella cheese, grated
1/3 cup parmesan cheese, grated
1/2 cup light cream or half and half
1/4 cup bread crumbs
1/8 cup olive oil
Directions:
Preheat oven to 350 degrees F. Use the oil to coat the sides of a 4-quart casserole dish. Combine the tomato sauce with the cream, mix well, then add the meatballs. Pour the meatball mixture into the casserole dish, top with the cheeses and breadcrumbs and bake uncovered for 25 minutes. Let stand for 5 minutes before serving.
Recipe can also be created using 12 Angus or 18 Turkey Meatballs from Cooked Perfect.
Mediterranean Meatball Casserole
Yield: About 4 servings
Cook Time: 35 minutes
Ingredients:
12 – 1-oz. Cooked Perfect Turkey Meatballs
1 – 10-oz. can stewed tomatoes, crushed
1/2 cup each of summer squash, zucchini, eggplant, red bell pepper, eggplant and white onion, diced
1/2 lb. of vine tomatoes, cut into sixths
1/8 cup fresh basil, chopped
1/4 cup parmesan cheese, grated
1/4 cup breadcrumbs
Salt and pepper to taste
Directions:
Preheat oven to 350 degrees F and oil the sides of a 4-quart casserole dish. In a 10” skillet, sauté the vegetables for 5 minutes. Add the meatballs and tomatoes and simmer 10 minutes, then add the fresh basil. Place everything in the casserole dish and bake for 20 minutes. Serve and enjoy.
Swedish Meatballs with Noodles and Gravy
Yield: About 4 servings
Cook Time: 15 minutes
Ingredients:
24 – ½-oz. Cooked Perfect Swedish Style Meatballs
2 cups beef broth
1 cup half and half
1 – 8-oz. bag egg noodles
1/8 teaspoon cinnamon
1/8 teaspoon nutmeg
1/8 teaspoon all spice
6 level teaspoons corn starch
Directions:
Combine the broth, half and half, spices and corn starch and heat until mixture thickens. Place the meatballs, gravy mixture and seasoning in a sauce pan and simmer on low heat for 15 minutes. Bring a large pot of salted water to a boil and cook the noodles for 5 minutes, then drain. In a large bowl, combine noodles with meatballs and gravy. Serve and enjoy.
Turkey Meatball Pie
Yield: About 4 servings
Cook Time: 30 minutes
Ingredients:
12 – 1-oz. Cooked Perfect Turkey Meatballs, cut in half
1 – 12-oz. jar turkey gravy
1 cup diced potatoes
1/2 cup frozen pearl onions
1/2 cup carrots, peeled and sliced
1/2 cup celery, sliced
1/4 cup frozen green peas
1 frozen 10” pie crust
1 egg
Directions:
Bring a quart of water to a boil and cook the potatoes, onions, celery and carrots until soft. Drain and mix with the gravy, meatballs and peas in a bowl. Place the crust into a buttered 10” pie pan and spoon in the filling. Cover with the remaining dough and crimp the edges tight. Slice a few lines through the top dough to vent. Brush with a beaten egg and bake for 20 minutes until crust is golden brown and filling is bubbling. Remove and let stand for 5 minutes. Serve and enjoy.
Angus Meatball Stew
Yield: About 6 servings
Cook Time: 25 minutes
Ingredients:
16 – 1½-oz. Cooked Perfect Angus Meatballs, cut in half
1 lb. of potatoes, diced
1/2 cup onion, diced
1/2 cup mushrooms, sliced
1/2 cup carrots, sliced
1/2 cup celery, sliced
2 – 12-oz. jars brown gravy
2 tablespoons Dijon mustard
1/8 cup Worcestershire Sauce
1/2 teaspoon salt
1/2 teaspoon pepper
1/8 teaspoon powdered clove
Directions:
Boil the vegetables until soft and drain. Combine all other ingredients with the vegetables in a 4-quart saucepan and simmer for 25 minutes. Let stand for 3-5 minutes before serving. Serve and enjoy.
Angus Meatball Cacciatore
Yield: About 6 servings
Cook Time: 30 minutes
Ingredients:
12 – 1½-oz. Cooked Perfect Angus Meatballs
1 cup onion, sliced
1 cup green pepper, sliced
1 cup red pepper, sliced
2 portabella mushrooms, sliced
1 – 16-oz. jar plum tomatoes, diced
1 teaspoon oregano
1 teaspoon dry basil
1 teaspoon red pepper flakes, optional
Salt and pepper to taste
Directions:
In a skillet heat the onions, peppers and mushrooms and cook for 10 minutes, stirring often. Add the meatballs, tomatoes and seasonings and continue to stir. Pour the stew into a chafing dish and bake for 20 minutes. Remove and let stand for 5 minutes. Serve and enjoy.
Angus Meatball Sheppards Pie
Yield: About 6 servings
Cook Time: 45 minutes
Ingredients:
8 – 1½-oz. Cooked Perfect Angus Meatballs, cut in half
1 – 10-oz. jar brown gravy
24 oz. of mashed potatoes
1/2 cup green peas
1/2 cup corn niblets
1/4 cup bread crumbs
1/2 cup milk
1/4 cup butter
Directions:
Combine the meatballs, peas, corn and gravy in a casserole dish. Top the mixture with mashed potatoes and sprinkle bread crumbs over the top. Bake for 30 minutes. Remove and let stand for 5 minutes. Serve and enjoy.
LUNCH RECIPES:
Escarole Soup with Turkey Meatballs and Pasta
Yield: About 4 servings
Cook Time: 25 minutes
Ingredients:
12 – 1-oz. Cooked Perfect Turkey Meatballs
4 pints chicken broth
2 cups escarole lettuce, chopped
1 cup each white onion, carrot and celery, diced
1/4 cup garlic, minced
1/8 cup fresh basil, chopped
2 cups bowtie pasta, cooked
Salt and pepper to taste
Directions:
In a 4-quart stock pot, bring the chicken broth to a boil, then add the vegetables, pasta and meatballs. Cover and let simmer for 25 minutes. Uncover and top with the fresh basil and parmesan cheese. Serve and enjoy.
Loaded Meatball Bruschetta
Yield: About 4 servings
Cook Time: 15 minutes
Ingredients:
24 – ½-oz. Cooked Perfect Italian Style Meatballs, sliced in half
3/4 cup each onions and red bell peppers, sliced
1 cup plum tomatoes, diced
1/8 cup Kalamata olives, pitted
2 tablespoons capers
2 French bread loaves
2 fresh mozzarella balls, sliced
1/3 cup olive oil
Directions:
Slice the French bread in half lengthwise and place sliced on cookie sheets. Using 1/2 of the olive oil, drizzle over loaves then place under a hot broiler until toasted. While bread is toasting, sauté the onions and peppers in a 10” skillet with the remaining olive oil for 10 minutes. Add the tomatoes and meatballs and simmer for 10 minutes, then add the olives and capers. Place the sliced mozzarella on the toasted French bread, top with the meatball mixture and bake in the oven for 5 minutes. Serve and enjoy.
Recipe can also be created using 8 Angus or 12 Turkey Meatballs from Cooked Perfect.
Meatball Panini
Yield: 2 sandwiches
Cook Time: 15 minutes
Ingredients:
8 – ½-oz. Cooked Perfect Italian Style Meatballs, cut in half
6-oz. can of tomato sauce
4 slices provolone cheese
4 large slices of Italian bread, pre-sliced
1 tablespoon olive oil
Directions:
Place the meatballs in a microwave safe dish, cover with tomato sauce, and microwave for 1 minute. Remove, stir, and microwave again for 1 minute. Slice the meatballs in half and evenly distribute the meatball halves and provolone cheese on 2 slices of Italian bread. Complete both sandwiches with the final 2 slices of Italian bread. Brush the outside of the bread with olive oil, place on a Panini grill and cook until golden brown and crispy. Serve and enjoy.
Swedish Meatball Salad
Yield: About 4 servings
Cook Time: 10 minutes
Ingredients:
16 – ½-oz. Cooked Perfect Swedish Style Meatballs
1 – 5-oz. bag mixed salad greens
1/2 cup raspberry vinaigrette
1 tomato, diced
1 red bell pepper, roasted and peeled
1/4 cup red onion, sliced
1/2 cup mandarin oranges, drained
1/4 cup walnut halves
1/4 cup dry cranberries
Directions:
Place meatballs in a microwave-safe dish with ¼-cup of the raspberry vinaigrette. Microwave for 2 minutes, stir, then microwave for 1 minute more. Place the rest of the ingredients, including the meatballs, into a large salad bowl and toss the salad well. Serve and enjoy.
Four Cheese Meatball Tortilla Wrap
Yield: 2 wraps
Cook Time: 5 minutes
Ingredients:
10 – ½-oz. Cooked Perfect Four Cheese Meatballs
1/2 cup of your favorite salsa
1/2 avocado, sliced lengthwise
1/2 cup lettuce, shredded
2 – 10” flour tortillas
Directions:
Place the meatballs on a microwave safe plate and cook for 1 minute, remove and slice in half. Warm the 2 tortillas in the microwave for 30 seconds. Slice the avocado half into 6 strips, lengthwise. Cook the sliced meatballs for 1 minute more. Remove and distribute the meatballs, avocado slices and lettuce evenly between the 2 tortillas. Roll each tortilla tightly with the ingredients inside. Serve and enjoy.
PARTY/APPETIZER RECIPES:
Meatball Stuffed Mushrooms
Yield: About 36 hors d’oeuvres
Cook Time: 15 minutes
Ingredients:
18 – ½-oz. Cooked Perfect Italian Style Meatballs, sliced in half
1 – 10-oz. jar beef gravy
36 large white button mushrooms
1 cup parmesan cheese, grated
Directions:
Preheat oven to 350 degrees F. Blanch the mushrooms in boiling water for 3 minutes, drain, then set aside. Simmer the meatballs and brown gravy in a 10” skillet for 5 minutes. Remove stems from mushrooms and place on a cookie sheet. Place 1 meatball in each mushroom cap, sprinkle with grated cheese and bake for 8 minutes. Let stand for 5 minutes before serving.
Wrapped Meatballs
Yield: About 32 wrapped meatballs
Cook Time: 20 minutes
Ingredients:
32 – ½-oz. Cooked Perfect Italian Style Meatballs
1 – 26-oz. jar of your favorite marinara sauce
2 packages crescent dough
1 cup parmesan cheese, grated
Directions:
Place 16 frozen meatballs on a microwave-safe plate and heat in the microwave for 2 minutes, then set aside and repeat the process for the remaining 16 frozen meatballs. Cut the crescent dough into 1 inch strips, then spread a teaspoon of marinara sauce over each strip. Roll each meatball with a strip of dough. Place each wrapped meatball on a greased cookie sheet and sprinkle with a little parmesan cheese. Bake in the oven for 10 minutes. Remove and let stand for 3-5 minutes. Serve and enjoy.
Sweet and Sour Swedish Meatballs
Yield: 36 meatballs in sweet and sour sauce
Cook Time: 25 minutes
Ingredients:
36 – ½-oz. Cooked Perfect Swedish Style Meatballs
1 – 12-oz. jar of your favorite sweet and sour sauce
1 – 11-oz. can mandarin oranges, drained
1 – 6-oz. can diced pineapple, drained
Directions:
In a large mixing bowl combine all ingredients together, then pour into a chafing dish. Bake for 20 minutes. Remove and let stand for 5 minutes. Serve and enjoy.
Angus Meatball Super Sub-Sandwich
Yield: About 4 servings
Cook Time: 15 minutes
Ingredients:
12 – 1½-oz. Cooked Perfect Angus Meatballs
1 – 2’ long soft sub roll
1 – 8-oz. jar of your favorite marinara sauce
6 oz. of mozzarella cheese, grated
3 tablespoons of olive oil
Directions:
Cut the sub roll in half lengthwise and hollow out the bread on both halves to remove from the crust. Brush the hollowed-out inside with olive oil, toast under a broiler and remove when slightly browned. Place a row of Angus Meatballs down the center of the bottom roll, then cover with marinara sauce and mozzarella cheese. Press the top roll into the bottom roll and bake for 5 minutes or until golden brown. Remove and let stand for 5 minutes. Serve and enjoy.
SNACK RECIPES:
Turkey Meatball Nachos
Yield: About 8-10 servings
Cook Time: 10 minutes
Ingredients:
20 – 1-oz. Cooked Perfect Turkey Meatballs, cut into quarters
1/2 large bag tortilla chips
1/2 cup cheddar cheese, grated
1 – 10-oz. jar salsa
1/2 cup sour cream
1/4 cup green onions, chopped
1/4 cup black olives, sliced
1/4 cup pickled jalapeños
Anything else you enjoy on your nachos
Directions:
Preheat oven to 350 degrees F. Microwave the Turkey Meatballs for 45 seconds, remove and slice them in half. Spread the chips out on a cookie sheet and top with the meatballs and all remaining ingredients. Bake for 8-10 minutes. Remove and let stand for 5 minutes. Serve and enjoy.
Meatball Sliders
Yield: About 4 servings
Cook Time: 5 minutes
Ingredients:
12 – 1-oz. Cooked Perfect Italian Style Meatballs
12 mini burger buns or rolls
1½ cups of your favorite marinara sauce
Directions:
Cut each hamburger bun into quarters. Combine meatballs and marinara sauce and place in a microwave-safe dish, cover and microwave on high for 1 minute. Stir, then microwave again for 1 minute. Stir and place a meatball on each bun. Serve and enjoy.
Grilled Meatball Skewers
Yield: About 4 servings
Cook Time: 15 minutes
Ingredients:
12 – 1-oz. Cooked Perfect Italian Style Meatballs
1 cup of your favorite BBQ sauce
1 each pepper and onion, cut large to fit on skewer
4 wood skewers
Directions:
Soak the wood skewers in water for 10 minutes. Place meatballs on a microwave-safe plate and heat in the microwave for 30 seconds. Skewer the meatballs, along with the cut peppers and onions, evenly distributing on all 4 skewers. Place on a grill and cook until brown. Baste with BBQ sauce for the last 3 minutes of cooking. Serve and enjoy.
KIDS RECIPES:
Meatball Pizza
Yield: Makes 1 – 10” pizza
Cook Time: 20 minutes
Ingredients:
20 – ½-oz. Cooked Perfect Italian Style Meatballs, cut in half
1 frozen prepared pizza dough sheet
1 cup marinara sauce
1 cup mozzarella cheese, grated
1/2 half cup parmesan cheese, grated
Directions:
Preheat oven to 350 degrees F. Rub a small amount of olive oil on a pizza pan, then place the pizza dough on the pan. Cover the crust with the parmesan cheese, then spread the sauce on the crust. Microwave the meatballs for 1 minute, cut in half, and arrange around the pizza. Top it all off with the mozzarella cheese. Bake for 10 minutes, or until crisp. Remove and let stand for 3-5 minutes. Serve and enjoy.
Kids’ Meatball Surprise
Yield: Serves about 5 kids
Cook Time: 30 minutes
Ingredients:
10 – ½-oz. Cooked Perfect Italian Style Meatballs
1 – 5½-oz. box of macaroni and cheese
1/2 cup bread crumbs
1/2 cup mozzarella cheese, grated
Directions:
Cook the macaroni and cheese as per directions on the box. While macaroni and cheese is cooking, grease the inside of a casserole dish and preheat oven to 300 degrees F. When macaroni and cheese is cooked, mix with the meatballs and pour mixture into the casserole dish, then cover with the bread crumbs and mozzarella cheese. Bake in the oven for 30 minutes. Let stand for 5 minutes before serving.
