Handling & Heating Instructions

Handling, thawing & holding

Shelf Life: Frozen – 12 months from production date unopened. 1-2 months is opened.
Shelf Life: Refrigerated – 60 days from production date unopened. 7 days if opened.

Storing:

  1. Receive all product directly into the freezer using standard receiving procedures

  2. Mark all cases with date of receipt

  3. Store cases in the freezer at least 6 inches off of the floor and away from walls

  4. Remove product from freezer on an as needed basis

Thawing:

  1. Thaw in a refrigerated case set at less than 40° F

  2. Mark all refrigerated cases with the date it is placed in the cooler

  3. Store product in cooler for no more than 7 days

Holding heated:

  1. Roller Grill: Hold for up to 4 hours maintaining internal temperature 140°F to 150°F

  2. Warmer: Hold for up to 4 hours in a sleeve; OR placed in a bun and individually wrapped with quilted foil paper hold for up to 4 hours in a warmer set at 145°F

  3. Steamer: Hold for up to 3 hours on simmer

Roller Grill

  1. Preheat roller grill on high
  2. Place on roller grill and heat on medium-high heat; if THAWED, 20-30 minutes or if FROZEN, 35-40 minutes until internal temp reaches 165°F
  3. Reduce roller grill setting to medium-low to hold for up to 4 hours to maintain internal temp between 140°F to 150°F (adjust to local health dept. regulations)

Steamer

  1. Place at least 1 inch of water in the bottom of the pan and do not let it run dry
  2. Set temperature to high-end of simmer, or low-end of boil
  3. Add THAWED or FROZEN product to pan with water & heat for 45-50 minutes or until internal temperature reaches 165°F
  4. Lower temperature to simmer and hold product for up to 3 hours

Oven

  1. Preheat oven to 375°F and place product on a baking tray
  2. If FROZEN, heat for 15-20 minutes or until internal temp reaches 165°F
  3. If THAWED, heat for 8-10 minutes or until internal temp reaches 165°F

Turbochef®

  1. Setpoint 500°F
  2. Place THAWED product on tray
  3. Cook Time 2:10 minutes
